The 2004 tofu count at Piedemontes, North Fitzroy saw a record 27 varieties of tofu in stock. That's 27 different tofu varieties in the one tiny IGA supermarket. Organic tofu, marinated tofu, sweet tofu, pickled tofu, low fat tofu, pre-diced and fried tofu - any tofu fantasy you can imagine.
Increased interest in TOFU '07 saw an official adjudicator for the first time, Gavin Gaskill. After the count was complete and a drop to 24 varieties had been confirmed Gavin said: "While it's disappointing that there's now a smaller tofu selection available to the North Fitzroy resident this drop has to be put in perspective; just one variety a year is disappearing from the shelves of Piedemontes which still leaves us with 23 more varieties than the shopper at Safeway or Coles in Croydon". Later, Gavin continued, "I'd like to see Piedemontes make a concerted effort to drive their numbers up to 30 in preparation for TOFU '10".
